Sometimes in life, there are products that change the game. They make things easier, faster to prepare, or add tons of flavor with little to no calories. In the case of my Urban Produce microgreens, I get all of the above, but I also get a huge nutritional boost because the concentrated microgreens have up to 6 times to nutrients as the green itself. In this deliciously fresh salsa, I used their cilantro microgreens and the punch of flavor was remarkable. If you can’t find them in you area, just use regular cilantro. What I love about the microgreens, aside from the extra nutrients, is that they’re living. I cut them right before using them, so they stay fresh longer and maintain their nutrients. These little babies have the actual coriander pods on them. How cool is that?! I am a sucker for all of their flavors, but I am especially partial to the arugula, wasabi and basil (of which you need very little to get a huge burst of flavor). I’ve created a pesto with mostly spinach and just a little of the urban produce basil because theirs is so potent.

There's nothing quite like watching my kids grab a set of scissors and cut off a big handful of broccoli or kale microgreens for their Paleo wraps for school lunches.

Instructions

  1. In a bowl, stir together the tomato, shallot, hot sauce, lime juice, salt and cumin.
  2. Fold in the cilantro and avocado.
  3. Plate each chicken breast and top with salsa, and serve.
(*To grill the chicken, heat a BBQ to medium-high. Sprinkle with salt and pepper and spray with cooking spray. Place on hot grill for 5 minutes, then flip, and cook for 2-3 minutes or until cooked through).
