Squash, Apple and Parsnip Soup

Another home-run for baby and the whole family!  Blended soups are a great way to get nutrients into the tummies of the ones you love.  This soup has lots of vitamins and is slightly sweet without being too high in sugars and carbs.  Serve in bowls for adults or spoon into your Little Mashies for babies/toddlers or even big kids who want leftovers for school like my 8-year old did tonight.

Instructions

Preheat oven to 400.  Place the squash in a baking dish filled with 1 inch of water, flesh side down.  Roast for 35-40 minutes or until soft.  Toss the parsnips and apples in a separate baking dish. Sprinkle with sugar substitute.  Add them to the oven and bake for 25 minutes or until soft.   Meanwhile, saute the onions in coconut oil spray for 3 minutes or until caramelized.  Set aside. Remove squash, apples and parsnips from oven and let cool slightly.  Pour everything into a blender with the remaining ingredients and puree until smooth.  Reheat on stove-top.  Top with freeze dried apples.
