Cinnamon Apple Pancakes

This “anything but short stack” definitely calls for multiple eaters because it’s filling!  I used a container of Modern Oats in this recipe because A: I think they’re super flavorful.  B: They’re organic and gluten-free. C: I can grab them right from the coffee counter at Whole Foods. and D: They’re filled with unique nuts and seeds and spices.  You certainly do not have to use them.  Just add 1/2 cup of regular oats to your mix instead.  Add a little extra stevia and cinnamon, and perhaps some dried apple pieces to achieve the yummy flavor of the Modern Oats container.

Cinnamon Apple Pancakes

Instructions

Blend all pancake ingredients together in a mini blender.  Pour over a hot griddle into sand dollar sized pancakes. Stir the sauce ingredients together. Decorate the plate with chopped apples, peanut butter chips, chocolate chips and PB sauce.
