Zoodles with Roasted Tomatoes

These tomatoes are slow roasted and end up sweet, delicious and a lovely complement to so many meals.  Try them on pizza, in pasta or tossed with other veggies.

Instructions

Preheat oven to 250.  Toss tomatoes in olive oil and garlic powder.  Lay on a nonstick baking sheet and spritz with cooking spray.  Bake for 2 hours.  Reduce heat to 200 and bake for 1 more hour.  Remove and cool.  Toss zoodles with dressing and top with tomatoes.
