Mini Coconut Cream Pie

If you crave something sweet from time to time, why not give in, but do so with less fat and sugar.  The use of protein powder helps stabilize blood sugar so that rapid insulin spikes are avoided.  There's no sugar in this dessert; the sweetness comes from Stevia.  This little mini pie was perfectly soft and very satisfying.

Preheat oven to 350 degrees. Pulverize the paleo macaroons and press into a small baking ramekin. Stir together the unsweetened coconut milk, 2 Tbs vanilla coconut protein powder by @wfitnutrition, 2 Tbs liquid egg white, 10 coconut stevia drops, 1 tsp monk fruit (or another sugar free granulated sweetener), 1 tsp coconut flour, 1 tsp lowfat coconut shreds and a pinch of baking powder. Add a few Lilly's no-sugar chocolate chips. Pour into crust. Bake for 13-15 minutes or until set (but not hard in center).
