Quinoa Crunch Salad with Skinny Peanut Dressing

When the site www.janethejock.com asked me to create a recipe just for them, I jumped at the chance.  Creator, Laura Jenks, began her site to destroy stereotypes regarding women about weight lifting and body image. She promotes fit bodies for women who want to get fit for themselves–verses other women's fitness magazines/blogs that constantly push the male influence, suggesting that women should, "get fit for your man" or "work out your abs for your guy!"  The mission of the site is to knock down these stereotypes and create a positive outlook on health without featuring starving women who think skinny is ideal. I just love women who empower other women, so Jane the Jock fans, this super crunchy, antioxidant-rich salad is just for you, and for all the other women (and men) who love to eat, but care about their bodies and what goes into them.

Family Salad or a Side Dish at a BBQ

  • Prep Time : 30 minutes
  • Cook Time : 8 minutes
  • Yield : 4


1. Toss all salad ingredients (minus the nuts) together in a large salad bowl. 2. In a small saucepan sprayed with cooking spray, saute the garlic for two minutes over medium heat.  Pour in the broth and then whisk in the powdered peanut butter and natural peanut butter until smooth. 3. Add the milk and sugar substitute and stir for 2 minutes as the sauce begins to reduce. 4. Add in the Bragg's, ginger, green onion and cayenne and cook one more minute.  Remove from heat and stir in the lime. 5. Let cool in the pan slightly before tossing salad in the dressing. Chill salad before serving. 6. Sprinkle with nuts just before serving.  Sprinkle with a few more cilantro leaves and add any fun spiralized veggies you like on top.  I added more carrot and cucumber on top because it's just so pretty:)
