Instructions

Preheat oven to 350 degrees. Spray an 8x3" loaf pan with cooking spray. Sprinkle with a little ZSweet or other no calorie granulated sugar. Microwave your bar on wax paper for 10 seconds. Use a rolling pin to roll to the size of the loaf pan. Press into bottom of pan. Mix eggs through flour with an electric mixer for 1 minute. Add remaining ingredients, except coconut, and beat another minute. Pour over crust and bake for 20 minutes. Remove and sprinkle with coconut. Cool and refrigerate for a minimum of two hours. Before plating, sprinkle the plate surface with coconut or ZSweet to prevent any crust sticking to your dish. Makes 8 bars.
