Protein Banana Muffins

I have a friend whose kids have nut allergies.  I cannot imagine that stress.  It’s got to be tough to constantly worry about allergic reactions and be forever on the prowl for nut-free recipes the kids will actually eat.  It’s because of her that I created this muffin recipe.  I actually forgot the eggs completely during one batch, and guess what- they were still awesome!  They didn’t even sink down.  They can be made in one bowl too, which we busy moms love.

Protein Banana Muffins

Preheat oven to 350 degrees.  Line 6 muffin tins with foil liners and spray them with cooking spray.  (Or make into a coffee cake in a small tin).  In a medium bowl, mix together all the dry ingredients (protein powder through cinnamon).  Add in the wet (egg through vanilla, then toss in the banana).  Don’t over mix.  Stir together the topping ingredients, if using.  Sprinkle evenly over the top.  Bake for 22-23 minutes or until inserted toothpick comes out clean.
