Preheat oven to 400 degrees. Remove the stem from the mushroom. Rinse and pat completely dry. Saute the onion in a small pan over medium-high heat with a little coconut oil cooking spray. Remove when they're caramelized. Sprinkle your seasoning into the mushroom and place half the cheese on the bottom. Fill it with your chicken, spinach and onions. Top with more cheese and olives. Bake for 15 minutes.
