Paleo Sweet Potato Pancakes

I think the hardest thing about Paleo cooking is breakfast, especially for kids. I guess hard isn't the right word, but the options feel limited, unless you're a bacon and eggs fanatic (which I am not). I wanted a sweet-ish type of breakfast that felt filling but had no actual sweetener of any kind. I tried making the famous "2-Ingredient Pancakes" (smashed banana and egg) but they were very runny and hard to flip.  Nope- I needed something much sturdier, yet simple enough for my kiddos to make on their own. I'm pleased to say--with only 3 ingredients needed--and 2-3 more as optional-- these were a huge hit! 2015-07-25 11.44.26

Instructions

1. In a medium bowl whisk the sweet potato, egg and egg white powder. Stir in any of the optional ingredients. 2. Heat a pan or griddle to medium-low. Coat the pan with coconut oil or coconut oil cooking spray. 3. Spoon the batter onto the pan 4 times.  Cook for 2-3 minutes per side. 4. Stir the applesauce and cashew butter together and place on top of the pancake stack, or simply top with applesauce and drizzle the cashew butter over the top.
