Squash Boats

A little sweet and a little savory, this colorful and heart-healthy recipe is a journey of flavors and textures.  If you don't know how to roast a squash, it's easy.  I was nervous once too, but you really cannot mess it up.  Simply slice the squash in half longways.  Scoop out the seeds.  Place flesh sides down in a large baking dish filled with 1 inch of water.  Bake at 400 for about 30-4o minutes, depending on the size.  You want it soft but not mushy.

Instructions

Saute the garlic and onion until caramelized. Toss in the chicken, kale, spinach, cranberries, curry and stevia. Fill squash “boats” with the mixture. Top with coconut and cashews.
