Mexi-Zucchini Boats

Zucchini boats are fun vessels in which to deliver ground turkey.  This version is stir fried with a little mashed sweet potato, onion, bell pepper and spices with olives and guacamole on top.  You'll save on carbs and have a delicious, flavorful meal! IMG_8227

  • Cook Time : 25 minutes

Instructions

Preheat oven to 375.  Heat garlic in a  large pan sprayed with cooking spray.  Ad the brown, add onion and bell pepper.  Cook 1-2 minutes.  Add in the turkey meat and brown for 2 minutes, then stir in the sweet potato, salsa and seasoning.  Cook until the meat is no longer pink, being careful not to overcook it.  With a spoon, scrape out the fleshy insides of the zucchini, creating a well.  Fill each with your meat.  Sprinkle with hot sauce, cheese (if using) and olives.  Bake for 28-30 minutes, or until the zucchini is tender but not soft.  Top with even dollops of guacamole.
