Healthy Snicker Bar Salad

By May 16, 2014

I can't get over how much this healthier version of "Snicker Bar Salad" tastes WAY better than the naughty version. Have you ever had it at a BBQ? My son said, "you call this a SALAD?!" Hey- I don't make this up, it's a real "thing." Kinda like our holiday "jello pretzel salad." Anyone know about that one? Anyway- the original one is basically whipped cream, apples, snicker bars, peanuts and caramel. Sugar city! Mine is FULL of protein and fiber with no added sugar! You need some Quest Bars for this awesome recipe.   You don't need a lot of this; just a small dish, so it serves at least 6 people, and possibly up to 8.  And it's gluten-free and relatively low in carbs!

Make this for your next gathering instead of sugar-foods!

Refrigerate your coconut milk can in the fridge overnight.  Scoop out the solid portion into a chilled bowl and beat for 2 minutes.  Add in the yogurt,  protein powder and sweetener and beat another minute.  Stir in the remaining ingredients.  Serve and watch the smiles happen:)
