Coconut flour makes these little beauties full of fiber.  The eggs and egg whites add protein, and the option of adding a Quest Bar inside boosts the protein even more.

Instructions

Preheat oven to 400° F.  Line 10 muffin cups with foil liners.  In a medium bowl, stir together the flour, spices, baking soda and salt.  In a larger bowl, add the pumpkin, eggs and whites and mix on low (or whisk).  Add in the coconut oil, sugar substitute, honey and vanilla.  Add the dry mixture to the wet and mix on low until all lumps are gone.  If using the Quest Bar, drop the pieces in and stir to incorporate.  Spoon batter into the 10 muffin cups about 3/4 full.  Top each with a pecan.  Bake for 18-19 minutes or until set.  Cool on a rack.
