Healthy Asian Lettuce Wraps

Regular lettuce wraps often contain MSG. And sugar.  Mine don't! I use coconut aminos instead of soy sauce, and a date to sweeten the sauce because most versions go overboard with brown sugar or honey.  They're super healthy, satisfying and easy. I love getting a ton of flavor into one dish (especially when I can do it with just a few ingredients and a quick whirl in the blender). Let me know if you give them a try! 2015-08-12 18.41.42

  1. In a mini-blender, add the water, date, coconut aminos, rice wine vinegar, lemon juice, mustard, chili paste, sesame oil and cayenne. Blend until smooth. Stir in garlic and ginger, if using.
  2. Heat a large pan over medium-high heat. Add the sesame oil and meat. Brown for about 2 minutes, then add the sauce and stir well. Add the mushrooms and green onion and saute until the mushrooms are tender.
  3. Using a slotted spoon, remove the meat and fill the lettuce cups.
  4. In a small bowl, stir together the coconut aminos, mustard, hot sauce and garlic powder. Drizzle on the lettuce wraps.
  5. Top with cucumbers and carrots. Add avocado or crushed peanuts, if you like, and serve. (I think 2 wraps per person is just about right. So this meal feeds 4.
