Preheat the oven to 400 degrees. Take the bagels and hollow one out (if there's a hole in it, plug it. Mine was so big the hole was nearly closed.) Research the pieces from it and chop it into bite-size "croutons.' Chop the entire second one.
In a bowl, mix in the egg whites, almond milk, 2 tablespoons of protein powder, cinnamon and 2 packets of sweetener. Whisk well. Toss all the bagel bites in it. Don't soak too much Use some to egg hash the inner bowl. Sprinkle everything with more granulated sweetener. Bake for 12-14 minutes.
Fill a bowl with dairy free cinnamon fluff: mix coconut cream, with remaining stevia, and 1.5 scoops of protein powder
