Crepes with Berries and Mint

Light, fluffy and protein filled with no sugar!  Serves 3 delicious crepes.  Garnish with whatever berries are organic and in-season!

Instructions

Directions:
Blend all the crepe ingredients until smooth.  Heat a crepe pan.  Spray with coconut oil spray.  Pour 1/3 of the batter in the pan and cook until nearly cooked through. Carefully loosen the sides and flip (or if you're too scared to flip, just cook it all the way through over medium heat so as not to burn them).  Repeat two more times.  Fill with low sugar preserves and berries and sprinkle with mint.
