Creamy Baked Figs

Fresh figs are so yummy when baked in the oven.  Try something new and pop these warm, gooey protein beauties into your mouth for a rich, creamy and guiltless taste experience!

  • Prep Time : 5 minutes
  • Cook Time : 18 minutes
  • Yield : 4

Instructions

Preheat oven to 350 degrees.  If the figs have pointy bottoms, cut them off so they stand up straight.  Place on a non stick cookie sheet.  Sprinkle each half with a little stevia.  In a small bowl, whisk together the ricotta through vanilla extract.  Spoon some into each fig half.  Sprinkle with a touch more stevia (I like to use erythritol or Monk fruit as my sugar substitute).  Bake for 10 minutes.  Remove and sprinkle walnuts on top.  Place back in oven for 7-8 minutes.
