I’m so into meal prep, it’s not even funny. I get the whole, “I’m busy thing.” But if you don’t want to end up starving, or making convenience foods your go-to, you just have to suck it up and either make extra meals, or create super simple meals, like this chicken and salsa stuffed bell pepper, that takes less than 5 minutes to make. Bake it while you’re doing dishes or playing with the kids, and then wrap it up for lunch. The next day, eat it cold, or warm it up, but no matter how you slice it, you’ll be glad you were prepared.
Feel free to swap in different flavors, spices or beans. You really cannot mess this up.
- Prep Time : 5 minutes
- Cook Time : 20 minutes
- Yield : 1
- Preheat oven to 350 degrees F.
- Slice the bell pepper in half longways. Remove seeds, stem and membranes.
- In a medium bowl, stir together the meat and salsa until well combined. Fold in the beans, garlic powder, and salt and pepper. Add half the mixture to each side of the bell pepper. Sprinkle the tops with green onion.
- Place in a baking dish.
- Bake for 20 minutes. Remove, and serve.
