I love fun, simple and tasty energy recipes for my kiddos' after school snacks.  Typical energy treats contain dates and honey and lots of oats, which are all quite tasty, but they contain more carbs than we can eat in my household.  So I created these yummy energy treats using some of my favorite ingredients. Enjoy!

Instructions

1. In a medium bowl, mix together the protein powder, chia seeds, oats, coconut and sweetener. 2. In a small bowl, break apart the Quest Bar into small pieces and microwave with the almond coconut milk for 45 seconds. 3. Stir in the cashew butter until smooth. 4. Pour the wet ingredients into the dry and keep stirring until you end up with a sticky dough. 5. Using your hands, roll the batter into 14 balls.  Roll each ball into the remaining coconut or just sprinkle some on top.
