As you know, I am big into “one-bowl wonders,” or in this case, one blender.  I can’t always be bothered with multiple bowls, wet and dry ingredients or the time it takes to wash everything.  If you can’t taste the difference between recipes with 4 bowls or 1, why would you make the extra mess?  Case in point….these delicious banana oat muffins that I made in my Nutri Bullet.  I needed some lunch items for my kids this week, and this is considered meal prep for them.  These are low fat, medium carb, medium protein snacks that travel well in lunchboxes.  If I toss some fruit, string cheese and turkey into a lunchbox, my kids would be satisfied and energized the entire school day.

Instructions

Preheat oven to 350 degrees.  In a small blender, blend the oats to a powder.  Add in the almond flour, almond milk, applesauce, Greek yogurt, sweetener and banana.  Blend again. Add in the egg whites, protein powder, baking powder, baking soda, vanilla extract and salt and pulse to combine.  Scrape down the sides and stir. Spray 6 muffin cups with cooking spray.  Divide batter evenly among each cup. Bake for 23-24 minutes, or until and inserted toothpick comes out clean. Enjoy!
