Basil Spinach Crepe

It may look complicated but this simple, clean,colorful and flavorful crepe takes just minutes to whip up thanks to a mini blender and fresh herbs.

Instructions

In a mini blender, add the egg whites, spinach, basil and garlic. Blend 20 seconds.  Pour into a skillet or crepe pan sprayed with cooking spray.  Cook all the way through.  Fill with onions, chicken, cheese and tomatoes.  Serve with a side salad and asparagus. *To slow-roast baby tomatoes: Take a pint of small tomatoes and toss with 1 teaspoon olive oil, 1 teaspoon garlic powder and salt and pepper.  Lay flat on a baking sheet and cook at 250 degrees for 2 hours.  Reduce heat to 200 degrees and cook one more hour.
